This Rooster has added a little sparkle and celebration to the flock. Hand-harvested Pinot Noir (52%) and Chardonnay (48%) grapes from the vineyards of the Okanagan and Similkameen valleys this delicious Brut was made in the classic traditional method.
This elegant, dry, bright, and lively sparkling wine has a creamy expanding mousse, and flavours of green apple and lemon. A traditional method sparkling wine for everyday enjoyment, for when friends gather alfresco, or during a lovely meal. Enjoy on its own or serve with fresh breads dipped into an Emmenthal and Gruyere cheese fondue, baked salmon wrapped in puff pastry, baked fish filet with citrus; smoked salmon appetizers or freshly baked quiche.

ABOUT THE WINE
Hand-harvested Pinot Noir (52%) and Chardonnay (48%) grapes from the vineyards of the Okanagan Valley [Oliver and Penticton regions] were whole-cluster pressed upon arrival at the winery. Each varietal was fermented separately in stainless steel tanks. The base wine was created by blending both the current vintage (2018 vintage; 96.5%) and the previous vintage (2017 vintage; 3.5%) to achieve the perfect balance of aromas, flavours, and structure. This base-wine assemblage was then bottled with a mixture of sugar and sparkling wine yeast, and sealed with a crown cap. After about 5 weeks of second fermentation within the bottle and a total of 36 months aging ‘sur lie’ in our sparkling wine cellar, the traditional method sparkling wine was ready to be disgorged. The wine was disgorged on December 12, 2022, and a dosage of the reserve wine plus sugar (10ml per bottle to balance the natural acidity) was added back to the wine.
TASTING NOTES
As the wine is poured look for tiny bubbles rising through a straw yellow backdrop. The bouquet of red apples, yeast, and fresh biscuit gently escapes from the glass. This elegant, dry, bright, and lively sparkling wine has a creamy expanding mousse, and flavours of green apple and lemon. The refreshing finish shows notes of green apple, white currant, lemon curd, yeast, and baked bread which linger endlessly. Enjoy a little sparkle while the wine is young and fresh.

Serve chilled at 10° to 12°C. A traditional method sparkling wine for everyday enjoyment, for when friends gather alfresco, or during a lovely meal.
