Red Rooster Reserve Viognier 2021 VQA

Harvested from Tainted Toes Vineyard in the Similkameen Valley.  75% of the grapes were destemmed and pressed, 25% were whole cluster and pressed, cool fermented and aged in stainless-steel dimple plate tanks for bright fruit aromas and flavours. After ferment finished, 30% of the wine was aged in a small concrete tank and 70% in a stainless-steel tank. The wines were later blended and then bottled. Very limited production of 250 cases.

Clear and bright with a pretty, aromatic aroma of apricot, yellow apple, honeycomb, and spring blossoms. This is a dry, medium-bodied wine with a smooth, slightly rich mouthfeel, along with flavours of tropical fruit, pear, and melon. The fresh acidity appears on the finish, along with flavours of tropical fruit and a touch of floral. Drink while young and fresh or cellar through 2024.

Serve chilled at 12 to 14°C with baked or pan-fried firm fillets of fish; Dungeness crab cakes; lightly seasoned pork tenderloin; crown roast of pork; poached salmon; mild curry chicken with jasmine rice; turkey breast with garlic aioli on crusty rolls; baked ham.
